Paleo Chicken Burgers

Happy Summer!! It’s grilling season, folks!  If you’re like me, I’m always looking for new healthy and seasonal recipes to make sure my health stays on track, especially during this season of parties, cookouts, and “vacation food”!

A favorite recipe at our house is the paleo chicken burger. We love its juicy flavor, and ground chicken provides a nice, leaner option (similar to turkey) as an alternative to ground beef burgers. And best of all, it’s very easy to make. Our friends regularly request we make this when they come over for dinner, which is so awesome that our friends support our healthier, 8WW-inspired way of eating, while enjoying it themselves.

Let’s get grilling!

To get started, you’ll need:

1 lb ground chicken

1 red bell pepper, diced

½ small white onion, diced

1 egg

Garlic Powder to taste

Pinch of salt and pepper

Butter lettuce, romaine, or cabbage of choice as a “bun”

Burger toppings of choice!

Instructions: 

In a large bowl, add ground chicken first. Add the rest of the ingredients and get your hands a little dirty: mix together until well combined.

Then fire up your grill. Divide meat into equal portion sizes and create chicken burger patties, rounding them out and flattening a bit. Place patties on hot grill. Cook about 10 minutes on each side until center is no longer pink. Take off grill when a meat thermometer reads 160 degrees F.

Before eating, add sliced cucumber, tomato, avocado slices, or any veggies you love, and wrap it all up in lettuce. Top your burger off with your favorite Greek Yogurt Ranch Dressing.
